Ingredients
- 500 gripe tomatoes · grated
- 200 gcooked green lentils · can use canned, drained
- 1 mediumonion · diced
- 2 clovesgarlic · minced
- 2 tbspolive oil · 30 ml
- 1 tspdried thyme · 5 g
- 1 tspsalt · 5 g
- 1 tspblack pepper · 2 g
- 200 mlwater · for consistency
Step by step
Preparation

Heat olive oil in a large skillet over medium heat. Add diced onion and sauté for 4–5 minutes until soft.

Add minced garlic, sauté 30 seconds more.

Stir in grated tomatoes, salt, thyme, and black pepper. Cook on medium heat for 10 minutes, stirring occasionally.

Add cooked lentils and water. Bring to a simmer, then reduce heat to low and cook for 10 more minutes, stirring occasionally until sauce thickens.

Serve over whole wheat pasta or vegetables. Garnish with fresh basil if desired.
