Step by step
Preparation
- 1
Lay the bacon strips in a single layer on a baking sheet lined with parchment. Slide the sheet into a cold oven, then set the temperature to 425°F (220°C). Bake for 15 to 25 minutes, until the bacon reaches your preferred crispness. Take the sheet out and move the bacon to a paper-towel-lined plate.
- 2
Mix the ground turkey, BBQ sauce, diced onion, garlic powder, cayenne pepper, salt and black pepper in a large bowl. Combine everything with clean hands until uniform, then portion the mixture into 4 equal mounds and shape each into a patty ½ inch thick.
- 3
To cook on the grill, heat the grill to medium-high, roughly 400°F (205°C), and brush the grate with avocado oil so the patties won’t stick. Put the patties on the hot grate and cook until the center of a patty registers 165°F (74°C) on a meat thermometer, 4 to 5 minutes per side. In the final minute, lay a slice of cheese on each patty and let it melt.
- 4
For the stovetop method, heat 1 tablespoon of avocado oil in a large skillet over medium-high heat. When the oil is hot, gently place the patties in the pan. Cook until the underside is golden brown and the center reaches 165°F (74°C) on a meat thermometer; allow 4 to 5 minutes per side. Put a slice of cheese on each patty during the final minute and wait for it to melt.
- 5
While the patties cook, place the pineapple slices on the grill and turn them once; cook until browned, about 3 to 5 minutes per side.
- 6
Set the cooked patties on the buns. Add a strip or two of bacon to each, then place a grilled pineapple slice on top. Finish with extra BBQ sauce and a red onion slice. This recipe yields 4 burgers.
