White Chocolate Blueberry Coconut Energy Bites
A no-bake snack made with oats, nut butter, coconut, white chocolate, and dried blueberries.
These no-bake bites combine oats, nut butter, coconut, and dried fruit in a convenient snack. Their energy and nutrition depend on the products and portion size.
Ingredients: 1 cup rolled oats, 1/2 cup unsweetened shredded coconut, 1/4 cup white chocolate chips, 1/4 cup dried blueberries, 1/3 cup peanut butter (or almond butter), 2 tablespoons maple syrup or honey, 1 tablespoon coconut oil (melted)
Method: Mix the dry ingredients in a bowl. Whisk the nut butter, sweetener, and melted coconut oil separately, then combine with the dry mixture. Chill for 15-20 minutes. Roll into about 12 small bites; add a little nut butter if the mixture crumbles or a little more oats if it is too soft.
Nutrition note: The bites contain carbohydrate, fat, and some protein, but they are not automatically a complete post-workout meal for everyone. White chocolate contains added sugar and does not guarantee a lower need for refined sugar.
Store in a sealed refrigerator container and use within 4-5 days. Dried cherries or raisins can replace blueberries. Anyone with peanut or tree-nut allergy should use an appropriate safe alternative.
