Salmon Taco Bowl – Athlete Protein Power
A high-protein salmon taco bowl with spiced rice, black beans, corn, and avocado – perfect for post-workout recovery and balanced nutrition.
This salmon taco bowl is designed for moderate to high-intensity training days, providing lean protein, complex carbs, and healthy fats to support muscle repair and glycogen replenishment. It’s a complete meal in one bowl.
Ingredients: 2 salmon fillets (8-10 oz total), 1 tbsp olive oil, 1 tsp chili powder, 1 tsp cumin, 1/2 tsp garlic powder, salt and pepper; 1 cup cooked jasmine rice, 1/2 cup canned black beans (rinsed), 1/2 cup canned corn (rinsed), 1 small avocado (sliced), 1/3 cup salsa, 2 tbsp sour cream or plain Greek yogurt (optional), 2 tbsp fresh cilantro (chopped), 1 lime (juiced).
Preparation: 1. Rub salmon with olive oil, chili powder, cumin, garlic powder, salt, and pepper. Cook in a non-stick pan over medium-high heat for 3-4 minutes per side (internal temp 145°F/63°C). 2. In a bowl, mix rice, black beans, and corn. 3. Place rice mixture in a bowl, top with avocado slices and salsa. 4. Slice salmon and place on top; garnish with sour cream/yogurt, cilantro, and lime juice.
Athlete note: Per serving, this bowl delivers ~40g protein, 50g carbs, and 20g healthy fats. Omega-3s from salmon reduce inflammation, while beans and corn add fiber. Rice replenishes muscle glycogen efficiently.
Storage: Refrigerate separately for up to 2 days. Reheat rice mixture briefly on the stove, and warm salmon in the microwave for 15 seconds. Swap salmon with grilled chicken if desired.
