Peach Avocado Summer Salad
A fresh peach, avocado, and grilled chicken salad with a creamy yogurt-dill dressing. Packed with protein and perfect for post-workout recovery.
This salad is crafted for active adults seeking a light yet satisfying post-workout meal on warm summer days. The combination of fresh fruit, lean protein, and a yogurt-based dressing supports muscle recovery while keeping you refreshed.
Ingredients: 1 ripe peach (sliced), 1 ripe avocado (sliced), 150g grilled chicken breast (sliced), 2 cups baby spinach, 1 cucumber (halved and sliced), 1/2 cup fresh corn (cooked or canned), 1/4 cup fresh dill (chopped). For the dressing: 3 tbsp Greek yogurt, 1 tbsp olive oil, 1 tbsp lemon juice, 1 clove garlic (minced), salt and pepper to taste.
Preparation: In a large bowl, place baby spinach. Top with sliced peach, avocado, chicken, cucumber, and corn. In a small bowl, whisk together yogurt, olive oil, lemon juice, garlic, salt, and pepper. Drizzle the dressing over the salad, sprinkle fresh dill, and toss gently. Serve immediately.
Athlete note: This salad provides approximately 35g of protein per serving from chicken and yogurt, along with healthy fats. The natural carbohydrates from peach and corn help replenish glycogen stores post-workout. Spinach and dill add antioxidants and iron.
