Cherry Tomato Ricotta Pasta
A quick post-workout pasta with cherry tomatoes and creamy ricotta, loaded with carbs and protein for recovery.
This recipe is designed to quickly replenish muscle glycogen stores and provide quality protein after an intense workout. The natural sweetness of cherry tomatoes pairs beautifully with creamy ricotta, creating a light yet satisfying dish ideal for runners, cyclists, or strength athletes.
Ingredients: 200g whole wheat spaghetti (or pasta of choice), 2 tbsp olive oil, 2 cloves garlic (minced), 300g cherry tomatoes (halved), 100g light ricotta cheese, 1/2 tsp salt, 1/4 tsp black pepper, 1/4 cup fresh basil leaves (optional).
Preparation: Cook pasta according to package directions until al dente; drain and reserve 1/4 cup pasta water. In a large pan, heat olive oil over medium heat. Add garlic and sauté for 1 minute. Add cherry tomatoes and cook for 5-7 minutes until softened, gently mashing them to release juices. Remove from heat, stir in ricotta, salt, and pepper. Add cooked pasta and reserved pasta water; toss well to combine. Garnish with basil and serve immediately.
Athlete note: This meal provides approximately 45-50g carbs and 15-18g protein per serving, ideal for post-exercise recovery. Whole wheat pasta offers sustained energy, while ricotta supplies casein protein to support muscle repair. For extra protein, add grilled chicken or turkey.
Storage: Store leftovers in an airtight container in the refrigerator for up to 2 days. Reheat with a splash of water and stir. Add fresh basil after reheating for best flavor. Swap ricotta with Greek yogurt for a tangier, lighter option.
